Is C incorrect because based on the information in the passage it's possible for two people to have the same health problems and therefore require the same dietary needs?

You are exactly right about C. We know that dietary needs vary widely. However, this does not mean that two people cannot have the same health issues and the same dietary needs.
D is a better choice. "Fad diets prescribe a single narrow range of nutrients for everyone." This directly contradicts the statement that follows, stating that people have different dietary requirements. Therefore, a narrow range of nutrients is not going to meet the needs of everyone.
